Sunday Dinner - Cranberry Apricot Chicken

Don't you just love those easy great recipes!  My sister, Linda often sends me the best ones!  Here's the latest!

Cranberry Apricot Chicken
6 Boneless Chicken breasts (we like thighs)
1 C. Apricot preserves
2 Tbl Dijon mustard
1/4 C. Rice vinegar
1/4 C. Brown sugar
1/2 C.dried chopped apricots
1/4 C. melted better
1/2 C. dried cranberries
350 oven.  Place chicken in greased baking dish.  Chop apricots and cranberries in food processor.  Remove from bowl.  Puree apricot preserves.  Add vinegar and brown sugar.  Pulse several times.  Transfer to bowl and add apricots, butter, mustard and cranberries.  Pour over chicken and bake uncovered or approx 1 hour and serve over rice.
