*Celebration Cupcakes*

My hat's off to Chockylit (who?) for these awesome cupcakes.  I printed off the recipe sometime ago and made them this am for our AP class.  O MY!!!  Yummy Good!
Old Fashioned Chocolate Cupcakes - Makes 8/350 oven
1/2 stick butter - room temp.  
1/2 + 2 Tbls sugar
1 large egg
1/3 + 2 Tbls flour
1/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/4 C High quality unsweetened cocoa powder (Kron, Valrhona)
1/4 C Milk
1/2 tsp Vanilla
Beat butter until softened.  Add sugar and beat until light and fluffy, 2 min.
Add egg and beat until well combined
Measure flour, baking powder, baking soda, salt & cocoa powder into a small bowl whisking to combine
Measure out the milk & vanilla & stir to combine
Add about a third of the dry ingredients to the butter/sugar and beat to combine.  Add about a half of the milk/vanilla and beat to combine.  Continue adding alternating between dry & wet and finishing with the dry.
Scoop batter into cupcake cups about 2/3's full.  Bake cupcakes for about 22-25 min until a cake tester comes out clean.

Vanilla Butter Cream Frosting
1 stick butter - unsalted, room temp
1 Tblsp Milk
1 Tsp Vanilla - I used Vanilla Paste
2-3 (2) Cups powdered sugar
Using an electric mixer, beat the butter at med speed until creamy
Add the milk, vanilla extract and 2 c of powdered sugar and beat at low speed, ocasionally stopping to scrape the sides and bottom of the bowl, until light and fluffy.  Add more powdered sugar to arrive at the consistancy & sweetness you like.
